The restaurant
Recommended by the Michelin Guide since 2023, Terroir has moved to the Madalena Beautique Hotel, on Rua da Madalena, a few minutes' walk from the main sights of the Baixa. It has a small, discreet entrance and a bistro-style dining room, with touches inspired by nature.
Chef Guilherme Sousa's cooking is Portuguese, with subtle international touches, and springs from his childhood memories and career: seasonal produce and an appreciation of humbler ingredients, as in the hake with potato and cozido broth, inspired by weekends with the family, or in the bread moment, served with olive oil and freshly grated muxama.
The restaurant serves surprise tasting menus, of five or eight courses, both with a vegetarian version, and a wine list overseen by sommelier and director Magda Martins.

Guilherme Sousa
He has run the kitchen at Terroir since 2022. Before that he worked at Michelin-starred establishments: Ocean, in the Algarve, where he began, Fortaleza do Guincho and Fifty Seconds.
